Ingredients
  

  • 4 large eggs
  • 1/2 pound breakfast sausage
  • 1/4 cup heavy cream
  • 1/2 cup shredded cheddar cheese
  • 1 tablespoon butter
  • Salt to taste
  • Black pepper to taste
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 cup chopped green onions
  • 1 avocado sliced

Method
 

  1. In a skillet over medium heat, crumble the breakfast sausage and cook until fully browned and cooked through. Transfer the sausage from the skillet and set aside.
  2. In a mixing bowl, vigorously whisk the eggs, heavy cream, salt, black pepper, garlic powder, and onion powder until thoroughly combined.
  3. Melt the butter in the same skillet over medium-low heat.
  4. Pour in the egg mixture and allow it to cook, stirring gently with a spatula to keep the eggs creamy and soft.
  5. As the eggs begin to set, sprinkle shredded cheddar cheese over the eggs and gently fold it in to melt.
  6. Return the cooked sausage to the skillet, gently folding it into the eggs and cheese until evenly combined.
  7. Distribute the hot egg and sausage mixture evenly between two serving bowls.
  8. Top each portion with chopped green onions and avocado slices. Serve immediately.
