Ingredients
  

  • ½ cup oat flour or almond flour for lower-carb
  • 1 scoop vanilla or chocolate protein powder
  • 2 tbsp nut butter peanut, almond, cashew, or sunflower seed
  • 1 –2 tbsp maple syrup or honey
  • 1 –2 tbsp milk of choice almond, oat, dairy
  • ½ tsp vanilla extract
  • Pinch of salt
  • 1 –2 tbsp mini chocolate chips
  • Optional: 2 tbsp mascarpone or coconut cream

Method
 

  1. In a medium bowl, whisk together oat flour, protein powder, and salt until evenly combined.
  2. Add nut butter, 1 tbsp maple syrup, vanilla extract, and 1 tbsp milk. Stir together—it will look crumbly at first.
  3. Add the second tbsp of milk gradually, stirring after each addition, until the dough is soft and holds together. Add the second tbsp of maple syrup if you want it sweeter.
  4. Gently stir in mini chocolate chips until evenly distributed.
  5. Enjoy immediately for a soft, mousse-like texture, or chill 15–20 minutes for a scoopable, cookie-dough consistency.
