Ingredients
  

  • 1 cup orzo pasta
  • 2 tablespoons olive oil
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 8 ounces mushrooms sliced (button or cremini)
  • 4 cups fresh spinach leaves
  • 1/4 cup grated Parmesan cheese
  • 2 cups vegetable broth
  • Salt and pepper to taste
  • Optional: 1 tablespoon lemon juice

Method
 

  1. Cook orzo according to package; drain and set aside.
  2. Sauté onion in olive oil until translucent (3-4 mins). Add garlic.
  3. Add sliced mushrooms and cook until golden brown (5-7 mins).
  4. Pour in vegetable broth and simmer.
  5. Stir in cooked orzo and spinach; cook until spinach wilts.
  6. Stir in Parmesan, season with salt/pepper/lemon, and serve.
