Ingredients
  

  • 4 flour tortillas
  • 1 cup fresh spinach chopped
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1 small tomato diced
  • 1/4 cup red onion thinly sliced
  • 1 tablespoon olive oil
  • Black pepper to taste

Method
 

  1. In a bowl, mix mozzarella, feta, spinach, tomato, onion, and pepper.
  2. Lay out tortillas. Spread filling over half of each tortilla and fold over.
  3. Heat olive oil in a non-stick skillet over medium heat.
  4. Cook quesadillas for 3-4 minutes per side until golden brown and cheese melts.
  5. Press gently with a spatula while cooking.
  6. Remove, slice into wedges, and serve warm.
