Ingredients
  

  • 1 pound ground beef
  • 1 package kielbasa sausage sliced
  • 1 tablespoon minced garlic
  • 1/2 onion diced
  • 1 14.5 ounce can diced tomatoes, drained
  • 1 can Rotel
  • 2 medium baking potatoes diced
  • 1 15 ounce can pinto beans, drained
  • 1 15.2 ounce can kernel corn, drained
  • 1 can peas drained
  • 2 cups beef broth
  • 2 teaspoons ground cumin
  • 2 teaspoons chili powder
  • Salt and pepper to taste

Method
 

  1. Set instant pot to sauté, once hot, add oil and onions. Sauté the onions for 5 minutes.
  2. Add ground beef and brown the meat.
  3. Once beef Is browned, add sliced sausage. Let cook for 2 minutes.
  4. Set instant pot to cancel.
  5. Add remaining ingredients, stir to mix. Seal the lid and pressure valve.
  6. Cook on high pressure for 3 minutes.
  7. Quick release pressure and enjoy.

Please ensure you drain the canned corn, peas, beans, and regular tomatoes well to prevent the stew from becoming too watery, though you should keep the liquid in the Rotel for extra flavor. Cut your potatoes into uniform 1/2-inch cubes to ensure they cook through completely during the short 3-minute pressure cooking cycle without turning into mush. Always perform a quick release of the pressure immediately after the timer beeps to stop the cooking process and keep the vegetables bright and distinct.
