- Combine lemon juice, honey, Dijon mustard, salt, and pepper in a bowl or jar.
- Slowly drizzle in olive oil while continuously whisking or shaking vigorously until well emulsified and creamy.
- Taste and adjust seasoning as needed.

Shake well before each use as natural separation occurs. Store in the fridge for up to a week. Olive oil may solidify when cold; bring to room temp before serving.
