Easy Honey Lemon Vinaigrette: Sunshine in a Jar

Once you try this on more than just greens, you’ll never go back. I use it to marinate chicken, brush it on grilled vegetables, even drizzle it over fresh mozzarella. It’s become my kitchen’s MVP.

Ingredients
  

  • 1/4 cup lemon juice
  • 2 tbsp honey
  • 1 tsp Dijon mustard
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup extra virgin olive oil

Method
 

  1. Combine lemon juice, honey, Dijon mustard, salt, and pepper in a bowl or jar.
  2. Slowly drizzle in olive oil while continuously whisking or shaking vigorously until well emulsified and creamy.
  3. Taste and adjust seasoning as needed.

Notes

Shake well before each use as natural separation occurs. Store in the fridge for up to a week. Olive oil may solidify when cold; bring to room temp before serving.
