There are many great store-bought hummus brands these days, but it’s so satisfying to make your own quick hummus using only pantry staples. Uses the cold water trick for extra fluffiness.

Ingredients
  

  • 1 15 oz can chickpeas, drained and rinsed
  • ¼ cup tahini
  • ½ tsp cumin
  • ½ tsp salt
  • 2 garlic cloves
  • Juice of 1 lemon
  • ¼ cup olive oil
  • ½ cup cold water
  • Paprika or za’atar for serving optional

Equipment

  • Food Processor A high-speed food processor is essential for breaking down the chickpeas into a creamy paste. A high-power blender can also work but requires more scraping down.
  • Citrus Juicer To get every drop of fresh lemon juice.
  • Spatula For scraping the sides of the processor bowl to ensure an even blend.

Method
 

  1. Remove skins from chickpeas for smoother consistency (optional but recommended).
  2. Place chickpeas, tahini, cumin, salt, lemon juice, and garlic in a food processor.
  3. Pulse to combine, then drizzle in olive oil while the machine is running.
  4. Drizzle in cold water and process until fluffy and desired smoothness is reached.
  5. Serve topped with extra olive oil and spices.

Notes

Store in an airtight container in the refrigerator for 1-2 weeks. Peeling the chickpeas takes time but ensures a silky texture.
