Ingredients
  

  • 2 Chicken breasts bite-sized
  • 2 Zucchinis sliced half-moons
  • 1 cup Cherry tomatoes halved
  • 1/2 Red onion sliced
  • 2 cloves Garlic minced
  • 2 tbsp Olive oil
  • 1 tsp Dried oregano
  • 1/2 tsp Dried basil
  • 1/2 tsp Smoked paprika
  • 1/4 tsp Red pepper flakes optional
  • 1/2 cup Shredded Mozzarella
  • 1/4 cup Parmesan cheese

Method
 

  1. Preheat oven to 375°F; grease baking dish.
  2. Toss chicken, veggies, oil, and spices in a bowl.
  3. Spread into baking dish.
  4. Top with mozzarella and parmesan.
  5. Bake covered 20 mins.
  6. Bake uncovered 10-15 mins until bubbly.
  7. Garnish and serve.

Notes

Letting the chicken rest for 5 minutes before serving allows the juices to redistribute for enhanced juiciness. If the dish seems too watery, try salting and draining the zucchini slices on paper towels for 10 minutes before assembling the bake.
