Ingredients
  

  • 12 oz chicken sausage sliced
  • 1 cup orzo pasta
  • 2 cups broccoli florets
  • 2 ½ cups chicken broth
  • 1 small onion chopped
  • 3 garlic cloves minced
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • ¼ cup Parmesan optional
  • Salt and pepper to taste

Equipment

  • Large Skillet A 12-inch skillet with high sides (or a Dutch oven) is ideal to hold the liquid and pasta without spilling.
  • Chef's Knife & Cutting Board For slicing the sausage and chopping onions/broccoli.
  • Measuring Cups & Spoons For accurate liquid ratios.
  • Wooden Spoon For sautéing and stirring the orzo to prevent sticking.

Method
 

  1. Heat olive oil in a skillet and brown sausage slices for 3-4 minutes. Remove and set aside.
  2. Sauté onion and garlic in the same pan until soft and fragrant.
  3. Add orzo and toast for 1-2 minutes.
  4. Pour in broth and simmer for 8-10 minutes.
  5. Stir in broccoli during the last 3 minutes of cooking.
  6. Return sausage to pan, add lemon juice and Parmesan (if using), and mix well. Serve hot.

Notes

Toasting the orzo adds nutty flavor. Use low-sodium broth to control saltiness. Ensure broccoli florets are cut small for even cooking.
